Recipes - Alt of My MindAle

(5 U.S. Gallons) (Extract & Grain)
This classic style Altbier is cold conditioned to reduce overall fruity esters. Slightly sweet with warm, rich malt tones, it finishes crisp and dry.

All Grain: 5 U.S. Gallons. Substitute 7.2 lbs Pilsen Malt for the LME. Single infusion mash at 155° F for 60 minutes.

Ingredients
6 lbs Briess CBW® Pilsen Light LME
1.5 lbs Briess Bonlander® Munich Malt
1 lb Briess Caramel Malt 60L
4 oz Briess Carapils® Malt
1 tsp Irish Moss (15 min boil)
0.75 oz Perle Pelletized Hops (9% AA hop) (60 min boil)
0.5 oz Spalt or Saaz Pelletized Hops (4% AA hop) (25 min boil)
0.5 oz Spalt or Saaz Pelletized Hops (4% AA hop) (5 min boil)
1 vial WLP036 Dusseldorf Alt Yeast
Extract & Grain Brewing Procedures:
  1. Perform mini-mash with 4 gallons of water and grains, steep at 1555-160° F for 45 minutes.
  2. Remove from heat. Add CBW® Pilsen Light LME and bittering hops and boil for 45 minutes.
  3. Add Irish Moss and boil an additional 15 minutes
  4. Add finishing hops and boil aadditional 5 minutes.
  5. Cool to 70° F, oxygenate wort and pitch yeast.

Fermentation

  1. Primary: 10 days at 63-68° F
  2. Secondary: 35 days at 35° F
  3. Bottle condition and age for 1 month
Notes
  1. Original Gravity: 1.050
  2. Final Gravity: 1.014
  3. Alcohol by wt: 3.8%
  4. Alcohol by vol: 4.7%
  5. IBU: 36
  6. Color (Lovibond): 14-18
