American Farmhouse Ale


This recipe couples a Belgian-style yeast blend with traditionally American ingredients to form a refreshingly light beer with a complex yeast flavor and a moderate level of sourness.

Ingredients

3.3 lbs CBW® Golden Light LME Extract, LME
0.5 lb CBW® Sparkling Amber DME Extract, DME
2 lbs Wheat Malt, Red Wheat
2 lbs Flaked Yellow Corn Flakes
0.5 oz Crystal Hops (5% AA) Boil 60 minutes
0.75 oz Crystal Hops (5% AA) Boil 15 minutes
1 vial WLP670 American Farmhouse Blend
1 capsule Servomyces Yeast Nutrient Boil 10 minutes

Procedures

  1. Perform mini-mash with 4 gallons of water and grains
  2. Steep at 152-158ºF for 30 minutes
  3. Add extract and flakes
  4. Bring to a boil
  5. Add bittering hops and continue to boil
  6. Add remaining hops and Servomyces as indicated
  7. Remove from heat
  8. Cool to 72ºF
  9. Transfer to primary fermenter
  10. Fill to desired level with cold water
  11. Oxygenate and pitch yeast

Primary Fermentation: 14 days at 72ºF
