Mildly English Ale


A classic English session beer brewed with the finest domestic ingredients. Light in body, but with some malt character, the lower levels of esters produced by the yeast and higher hopping levels lead to a clean, dry finish.

Ingredients

3.3 lbs CBW® Golden Light LME Extract, LME
8 oz Cane Sugar
8 oz Caramel Malt 120L Caramel, Crystal
4 oz Carapils® Malt Dextrine
1 tsp Irish Moss Boil 15 minutes
0.75 oz US Fuggles Hops (5% AA) Boil 45 minutes
1 vial WLP026 Premium Bitter Ale Yeast Substitute WLP038 Manchester Ale Yeast

Procedures

  1. Perform mini-mash with 4 gallons of water and grains
  2. Steep at 152-158ºF for 30 minutes
  3. Add extract and cane sugar
  4. Bring to a boil
  5. Add bittering hops and continue to boil
  6. Add Irish Moss as indicated
  7. Remove from heat
  8. Cool to 72ºF
  9. Transfer to primary fermenter
  10. Fill to desired level with cold water
  11. Oxygenate and pitch yeast

Primary Fermentation: 10 days at 67-70ºF

Secondary Fermentation: 35 days at 35ºF

Original Gravity: 1.032

Final Gravity: 1.007

Alcohol by Weight: 2.6%

Alcohol by Volume: 3.3%

IBU: 15

Color: 18-22 SRM
