Ingredients

4 lbs Pilsen Malt Base
2 lbs Wheat Malt, White Wheat
1.5 lbs Flaked Wheat Flakes
.75 lb Flaked Rice Flakes
.75 lb Flaked Yellow Corn Flakes
.25 lb Flaked Oats Flakes
.25 lb Rice Hulls
.75 oz Northern Brewer Hops (7% AA) Boil 60 minutes
1 oz Bitter Orange Peel Boil 10 minutes
.5 oz Coriander Cracked Boil 1 minute
1 vial WLP410 Belgian Wit II Yeast
1 capsule Servomyces Yeast Nutrient Boil 10 minutes

Procedures

  1. Mash grains at 154-158ºF for 45 minutes
  2. Heat to 170ºF
  3. Lauter
  4. Boil with bittering hops for 50 minutes
  5. Add Bitter Orange Peel, boil 9 minutes
  6. Add Coriander, boil 1 minute
  7. Cool to 70ºF, oxygenate wort
  8. Pitch 1 vial WLP410 Belgian Wit II Yeast

Primary Fermentation: 2 weeks at 70ºF

Secondary Fermentation: None

Fermentation Notes:

Original Gravity: 1.045

Final Gravity: 1.011

Alcohol by Weight: 3.5%

Alcohol by Volume: 4.4%

IBU: 17
