Sure to fuel the late night gift wrapping session or ease the pain from the sledding accidents, this lightly spiced amber lager ages very well up to 6 months.

Ingredients

6.6 lbs CBW® Pilsen Light DME Substitute 8.8 lbs LME Extract, DME
4 oz Carapils® Malt Dextrine
12 oz Caramel Malt 40L Caramel, Crystal
2 lbs Honey Medium to dark
1 tsp Irish Moss Boil 15 minutes
1.25 oz Hallertau Hops (6.5% AA) Boil 45 minutes
1 oz Saaz Hops Boil 1 minute
0.5 tsp Cinnamon, freshly ground Boil 1 minute
0.5 tsp Nutmeg, freshly ground Boil 1 minute
2 vials WLP885 Zurich Lager Yeast
0.5 vial WLP885 Zurich Lager Yeast

Procedures

  1. Perform mini-mash with 4 gallons of water and grains
  2. Steep at 152-158ºF for 30 minutes
  3. Add extract and honey
  4. Bring to a boil
  5. Add bittering hops and continue to boil
  6. Add remaining hops, spices and Irish Moss as indicated
  7. Remove from heat
  8. Cool to 55-60ºF
  9. Transfer to primary fementer
  10. Fill to desired level with cold water
  11. Oxygenate and pitch yeast

Primary Fermentation: 2 weeks at 55ºF

Secondary Fermentation: 6 weeks at 35ºF

Fermentation Notes: Bottle condition with malt extract and additional yeast

Original Gravity: 1.084

Final Gravity: 1.018

Alcohol by Weight: 6.9%

Alcohol by Volume: 8.6%

IBU: 30

Color: 12-15 SRM
