Red Cream Lager
The clean crisp character of the Mexican lager yeast allows the smooth, sweet and creamy flavors of the Caracrystal® Wheat Malt to shine through in this balanced red lager

Ingredients

5 lbs - CBW® Pilsen Light DME - Substitute 6.6 lbs LME
8 oz - Carapils® Malt
12 oz - Caracrystal® Wheat Malt
1 tsp - Irish Moss - Boil 15 minutes
0.5 oz - Hallertau Hops (6.5% AA) - Boil 45 minutes
0.25 oz - Hallertau Hops (6.5% AA) - Boil 15 minutes
0.25 oz - Hallertau Hops (6.5% AA) - Boil 1 minute
1 vial - WLP940 Mexican Lager Yeast - Primary fementation

Directions

Perform mini-mash with 4 gallons of water and grains
Steep at 152-158ºF for 30 minutes
Add extract
Bring to a boil
Add bittering hops and continue to boil
Add remaining hops and Irish Moss as indicated
Remove from heat
Cool to 55-60ºF
Transfer to primary fermenter
Fill to desired level with cold water
Oxygenate and pitch yeast
