Victory at all Costs

Ingredients

  • 9 lbs Briess Pale Ale Malt
  • 1 lb Briess Victory® Malt
  • 1 lb Briess Caramel Malt 60L
  • 4 oz Briess Carabrown® Malt
  • 2 oz Briess Chocolate Malt
  • 1 oz Fuggle (5.0% AA hop) – 60 minute boil
  • 0.5 oz Fuggle (5.0% AA hop) – 10 minute boil
  • 0.75 Liberty (3.5% AA hop) – 10 minute boil
  • 1 vial White Labs WLP011 European Ale Yeast
  • 1 capsule Servomyces Yeast Nutrient – 10 minute boil

Procedures

  • Mash grains at 148-152ºF for 45 minutes
  • Heat to 170ºF
  • Lautering
  • Boil with bittering hops for 50 minutes
  • Add second hop addition, boil 10 minutes
  • Cool to 60ºF, oxygenate wort
  • Pitch 1 vial WLP011 European Ale Yeast

Fermentation

  • Primary Fermentation: 2-3 weeks at 60ºF
  • Secondary Fermentation: 2 weeks at 40ºF (optional)
  • Fermentation Notes: Bottle condition with cane sugar or force carbonate
