    Ingredients

    7.0 lbs CBW® Pilsen Light DME 60 min boil
    1.0 lb Briess Caramel Malt 40L Steep Grain
    1.0 lb Dextrose 5 min boil
    1 oz Bravo Hops (11.0% AAU) 60 min boil
    1 oz Bravo Hops (11.0% AAU) 5 min boil
    1 oz Simcoe Hops Dry Hop Secondary
    1 oz Citra Hops Dry Hop Secondary
    2 packs WLP001 California Ale Yeast Fermenter

    Procedures

    1. Steep Caramel Malt 40L in grain bag at 150-160°F for 20 minutes
    2. Remove grain, dissolve extract, add 1 oz Bravo Hops, then bring to boil
    3. Boil for 55 minutes
    4. Turn off heat, dissolve Dextrose, add 1 oz Bravo Hops, then bring to boil
    5. Boil 5 minutes
    6. Turn off heat and cool to 66°F
    7. Transfer to fermenter
    8. Pitch two pack of WLP001 California Ale Yeast

    Primary Fermentation: 2 weeks at 70-73°F

    Secondary Fermentation: 1 week at 32-40°F with 1 oz of each Simcoe and Citra Hops

    Fermentation Notes: Force carbonate, or bottle condition with dissolved priming sugar and 1/4 packet of WLP001 California Ale Yeast for 2-3 weeks

    Original Gravity: 1.073

    Final Gravity: 1.016
