    1.0 lb CBW® Sparkling Amber DME Boil 60 minutes Malt Extract
    1.5 lbs Cane Sugar Boil 60 minutes
    0.5 oz Galaxy Hops (16% AAU) Boil 60 minutes
    1.0 oz Galaxy Hops (16% AAU) Boil 15 minutes
    1.5 oz Galaxy Hops (16% AAU) Boil 5 minutes
    2.0 oz Ella Hops (15% AAU) Dry Hop
    2.0 oz Enigma Hops (18% AAU) Dry Hop
    2 packs WLP009 Australian Ale Yeast (plus 1/4 pack for bottle conditioning) Fermenter

    Procedures

    1. Dissolve extract and sugar in 5 gallons of water
    2. Bring to boil, add 0.5 oz of Galaxy hops
    3. Boil for 45 minutes, then add 1.0 oz of Galaxy hops
    4. Boil for 10 minutes, then add 1.5 oz Galaxy hops
    5. Boil remaining 5 minutes
    6. Turn off heat and cool wort to 66°F
    7. Transfer to fermenter
    8. Pitch two packs of WLP009 Australian Ale Yeast

    Primary Fermentation: PRIMARY FERMENTATION: 1-2 weeks at 66-68°F

    Secondary Fermentation: 2 weeks at 34-40°F. Dry hop with 2 oz Ella and Enigma hops.

    Fermentation Notes: Force carbonate, or bottle condition with dissolved priming sugar and ¼ pack of WLP009 Australian Ale Yeast for 2-3 weeks

    Original Gravity: 1.067

    Final Gravity: 1.012
