Ingredients

8 lbs Brewers Malt Base
1 lb Bonlander® Munich Malt Kilned, Munich
0.5 lb Caramel Malt 20L Caramel, Crystal
1 oz Galaxy Hops (13.0% AA hop) 60 min boil
1 lb Orange Blossom Honey Prior to knockout
1.5 lbs Oregon Fruit Products Cherries Day 3
0.25 oz Hibiscus Flowers Day 4
1 oz Fresh Lime Juice Day 4
1 vial White Labs WLP005 British Ale Yeast
1 capsule Servomyces Yeast Nutrient 10 min boil

Procedures

  1. Mash grains at 148ºF for 60 minutes
  2. Heat to 170ºF
  3. Lautering
  4. Boil with bittering hops for 60 minutes
  5. Prior to knock out, add and stir well to dissolve honey without overcooking
  6. Cool to 66ºF, oxygenate wort
  7. Pitch 1 vial WLP005 British Ale Yeast
  8. On day 3 of fermentation add cherries
  9. On day 4, make a tincture of hot water, lime juice, and hibiscus flower, then add to beer

Primary Fermentation: 2-3 weeks at 66ºF

Secondary Fermentation: 2 weeks (preferably at 36ºF)

Fermentation Notes: Day 3 Add Cherries; Day 4 Add Tincture; Bottle condition with cane sugar or force carbonate

Original Gravity: 1.053

Final Gravity: 1.012

Alcohol by Weight: 5.3%
