1.5 lbs CBW® Pilsen Light DME 60 minute boil Extract, DME
.5 lbs Midnight Wheat Malt Steep Bitterless Black
1 lb Cane Sugar 60 minute boil
1 oz Magnum Hops (14% AA) 60 minute boil
1 oz Amarillo Hops 20 minute boil
1 oz Amarillo Hops 5 minute boil
1 oz Amarillo Hops 1 minute boil
1 oz Cascade Hops 1 minute boil
1 oz Cascade Hops Dry Hop
2 vials WLP001 California Ale Yeast Fermenter

Procedures

  1. Steep crushed Midnight Wheat in water at 150-158ºF for 30 minutes
  2. Remove grain and then dissolve extract in warm water
  3. Bring to boil
  4. Add 1 oz Magnum Hops and boil for 60 minutes
  5. Add 1 oz Amarillo Hops during each of the final 20, 5, and 1 minutes of boil
  6. Add 1 oz Cascasde hops during the final 1 minute of boil
  7. Turn off heat and cool wort to 68ºF
  8. Transfer to fermenter
  9. Pitch 2 packs of WLP001 California Ale yeast

Primary Fermentation: 1-2 weeks at 66-68ºF

Secondary Fermentation: Add 1 oz Cascade Hops for 4 days and then cool to 36ºF for 1-2 weeks

Fermentation Notes: Force carbonate, or bottle condition with dissolved priming sugar and 0.25 packs of WLP001 California Ale Yeast for 2-3 weeks

Original Gravity: 1.070

Final Gravity: 1.015
