Distant Whistles


The author of this recipe claims the taste of his homebrew reminds him of the sound of a distant train on a summer night. It should come as little surprise that he's a retired railroad engineer.

Ingredients

3.3 lbs CBW® Sparkling Amber LME Extract, LME
1 lb CBW® Porter DME Extract, DME
1 lb Rice Syrup, Dry Dry
0.8 oz Northern Brewers Hops Boil 60 minutes
0.2 oz Mt. Hood Hops Boil 5 minutes
2 pkg Nottingham Lager Yeast, Dry

Procedures

  1. Bring 4 gallons of water to a boil
  2. Add extract and syrup
  3. Stir vigorously to dissolve
  4. Bring to a boil
  5. Add bittering hops and bring to a rolling boil
  6. Add finishing hops as indicated
  7. Remove from heat
  8. Cool to 55-60ºF
  9. Transfer to primary fermenter
  10. Fill to desired level with cold water
  11. Oxygenate and pitch yeast

Primary Fermentation: 7 days at 65ºF

Secondary Fermentation: Optimum temp is 34-38ºF until beer reaches its final gravity
