Ingredients

0.5, 0.25, 0.5 oz Galena, Simcoe, Amarillo Hops (12, 12, 10% AAU) 20 minute boil
0.5, 0.25, 0.5 oz Galena, Simcoe, Amarillo Hops (12, 12, 10% AAU) 2 minute boil
0.5, 0.25, 0.5 oz Galena, Simcoe, Amarillo Hops (12, 12, 10% AAU) Fermenter
1 pack WLP001 California Ale Yeast (plus 1/4 pack for bottle conditioning) Fermenter

Procedures

  1. Mash crushed grains in 4 gallons of water at 153-155°F for 60 minutes
  2. Sparge grain with 170°F water to obtain desired pre-boil kettle volume
  3. Boil 40 minutes
  4. Add 0.5 oz Galena, 0.25 oz Simcoe, and 0.5 oz Amarillo hops
  5. Boil 19 minutes
  6. Add 0.5 oz Galena, 0.25 oz Simcoe, and 0.5 oz Amarillo hops
  7. Boil for 1 minute
  8. Turn heat off and cool wort to 68°F
  9. Transfer to fermenter
  10. Pitch one pack of WLP001 California Ale Yeast

Primary Fermentation: 1-2 weeks at 66-70°F

Secondary Fermentation: 1 week at 34-40°F with 0.5 oz Galena, 0.25 oz Simcoe, and 0.5 oz Amarillo

Fermentation Notes: Force carbonate, or bottle condition with dissolved priming sugar and ¼ pack of WLP001 California Ale Yeast for 2-3 weeks

Original Gravity: 1.056

Final Gravity: 1.012
