0.25 lbs Caramel Malt 80L Steep Grain Caramel, Crystal
0.5 oz Centennial Hops (9.0% AAU) 60 min boil
0.25 oz each Simcoe and Amarillo Hops (12% and 8% AAU) 30 min boil
0.5 oz each Simcoe and Amarillo Hops (12% and 8% AAU) 5 min boil
1.25 oz each Simcoe and Amarillo Hops (12% and 8% AAU) Secondary Fermentation
2 packs WLP001 California Ale Yeast Fermenter
1 capsule Servomyces Yeast Nutrient 10 min boil

Procedures

  1. Dissolve extracts in warm water, heat to 170ºF
  2. Steep Caramel Malt for 30 minutes at 170ºF
  3. Remove grain and bring to a boil
  4. Add 60-minute Hops, boil for 30 minutes
  5. Add 30-minute Hops, boil for 20 minutes
  6. Add Servomyces Yeast Nutrient, boil 5 minutes
  7. Add 5-minute Hops, boil 5 minutes
  8. Turn heat off and cool wort to 69ºF
  9. Transfer to fermenter
  10. Pitch two packs of WLP001 California Ale Yeast

Primary Fermentation: 2-3 weeks at 67-71ºF

Secondary Fermentation: Add 1.25 oz of Simcoe and Amarillo Hops, ferment for 4 days, then transfer off hops

Fermentation Notes: Force carbonate, or bottle condition with dissolved priming sugar and 1/4 pack of WLP001 California Ale Yeast for 2-3 weeks

Original Gravity: 1.063

Final Gravity: 1.014
