Golden Dragon Belgian Strong Ale
From East Flanders, versatile yeast that can produce light Belgian ale to high gravity Belgian beers. A combination of fruitiness and phenolic characteristics dominate the flavor profile. Some sulfur is produced during fermentation, which will dissipate following the end of fermentation.

Ingredients

18 lbs - Brewers Malt
1 lb - Amber Belgian Candi Sugar - Boil 90 minutes
0.75 oz - Fuggles Hops (4% AA) - Boil 90 minutes
0.75 oz - Fuggles Hops (4% AA) - Boil 60 minutes
0.5 oz - Tettnanger Hops (5.5% AA) - Boil 1 minute
0.5 oz - Hallertau Hersbruecker Hops (2.9% AA) - Boil 1 minute
0. 75 oz - Coriander - Crushed, Boil 1 minute
0.5 oz - Dried Orange Peel - Boil 1 minute
2 vials - WLP570 Belgian Golden Ale Yeast

Directions

Upward step infusion mash with grains (123ºF 10 min; 145ºF 15 min; 151ºF 60 min; 160ºF 15 min; 168ºF 10 min)
Collect 7.5 gallons into the boiler
Boil down to 6 gallons
Collect 5 gallons in fermenter
