At a modest 4.0% alcohol this beer allows for prolonged enjoyment of Simcoe and Amarillo hop aromas.

Ingredients

4.5 lbs - Pale Ale Malt - Mash Grain
1.0 lb - Carapils® Malt - Mash Grain
1.0 lb - Wheat Malt, Red - Mash Grain
0.75 lb - Caramel Malt 40L - Mash Grain
0.25 oz - Amarillo Hops (9.5% AAU) - 60 minute boil
0.5 oz each - Amarillo & Simcoe Hops (9.5% & 14.0% AAU) - 20 minute boil
0.5 oz each - Amarillo & Simcoe Hops (9.5% & 14.0% AAU) - 1 minute boil
0.5 oz each - Amarillo & Simcoe Hops (9.5% & 14.0% AAU) - Fermenter
1 pack - WLP001 California Ale Yeast (plus 1/4 pack for bottle conditioning) - Fermenter

Directions

Mash crushed grains in 3.5 gallons of water at 153-155°F for 60 minutes
Sparge grain with 170°F water to obtain desired pre-boil kettle volume
Bring to boil, add 60-minute Hops
Boil 40 minutes, add 20-minute hops
Boil for 19 minutes, add 1-minute hops
Boil for 1 minute
Turn heat off and cool wort to 66°F
Transfer to fermenter
Pitch one pack of WLP001 California Ale Yeast
