Tomorrow River Ale
This ale suffered a life of anonymity for over five years, until one afternoon in early spring two fly fishermen sat on the banks of a crystal-clear, spring-fed stream in Central Wisconsin, celebrating a banner day of fishing with a bottle of homebrew. From that day forward the ale was fondly named after the river where watercress still sways in the gentle current.

Ingredients

6.6 lbs - CBW® Sparkling Amber LME
1 oz - Kent Goldings Hops - Boil 60 minutes
1 oz - Kent Goldings Hops - Boil 5 minutes
0.5 oz - Kent Goldings Hops - Add dry to secondary fermenter and strain before bottling
1 pkg - #1059 Ale Yeast

Directions

Bring 4 gallons of water to a boil
Add extract
Stir vigorously to dissolve
Bring to a boil
Add bittering hops and continue to boil
Remove from heat
Cool to 55-60ºF
Transfer to primary fermenter
Fill to desired level with cold water
Oxygenate and pitch yeast
