    Ingredients

    6.0 lbs Pilsen Malt Mash Grain Single varietal base malt
    1.0 lb Flaked Yellow Corn Mash Grain Pregelatinized corn flakes
    1.25 lbs Dextrose Fermenter
    0.75 oz Saaz Hops (3.0% AAU) Boil 60 min
    0.5 oz Saaz Hops (3.0% AAU) Boil 15 min
    0.5 oz Saaz Hops (3.0% AAU) Boil 5 min
    2 packs WLP815 Belgian Lager Yeast (plus 1/4 pack for bottle conditioning Fermenter

    Procedures

    1. Mash grains at 150-153°F for 60 minutes
    2. Lauter and bring kettle to volume
    3. Bring to boil, add 0.75 oz of Saaz hops
    4. Boil for 45 minutes, then add 0.5 oz of Saaz hops
    5. Boil for 10 minutes, then add 0.5 oz Saaz hops
    6. Boil remaining 5 minutes
    7. Turn off heat and cool wort to 50°F
    8. Transfer to fermenter
    9. Pitch two packs of WLP815 Belgian Lager Yeast

    Primary Fermentation: 2-3 weeks at 50-54°F. Near end of fermentation dissolve Dextrose in one quart of hot water and allow to cool to <70°F before adding to fermenter. Raise to 60°F until fermentation is complete

    Secondary Fermentation: 4 weeks at 34-40°F

    Fermentation Notes: Force carbonate, or bottle condition with dissolved priming sugar and ¼ pack of WLP815 Belgian Lager Yeast for 2-3 weeks

    Original Gravity: 1.038 (1.048 w/ dextrose in fermenter)

    Final Gravity: 1.008
