Quantity Ingredient Comment Malt Style 9 lbs Pale Ale Malt Base 1 lb Victory® Malt Roasted, Biscuit 1 lb Caramel Malt 60L Caramel, Crystal 4 oz Carabrown® Malt Roasted, Brown 2 oz Chocolate Malt Roasted, Chocoalte 1 oz Fuggle (5.0% AA hop) 60 min boil 0.5 oz Fuggle (5.0% AA hop) 10 min boil 0.75 oz Liberty (3.5% AA hop) 10 min boil 1 vial White Labs WLP011 European Ale Yeast 1 capsule Servomyces Yeast Nutrient 10 min boil
Procedures
- Mash grains at 148-152ºF for 45 minutes
- Heat to 170ºF
- Lautering
- Boil with bittering hops for 50 minutes
- Add second hop addition, boil 10 minutes
- Cool to 60ºF, oxygenate wort
- Pitch 1 vial WLP011 European Ale Yeast
Primary Fermentation: 2-3 weeks at 60ºF
Secondary Fermentation: 2 weeks at 40ºF (optional)
Fermentation Notes: Bottle condition with cane sugar or force carbonate
Original Gravity: 1.055
Final Gravity: 1.015
Alcohol by Weight: 4.3%
